Alan Hardy and Vicky Juett look forward to welcoming you aboard Genesis II.  This well experienced couple have been sailing and diving together for the last six years.  

They met in the UK and have since worked together on Maxi yachts and Tall ships in Australia, charter yachts in the Windward Isles and diving live-aboards in the Red Sea.



Alan is an RYA commercially endorsed Yachtmaster, a Yachting Australia Skipper and an Australian Maritime Safety Association Coxswain.  He has skippered yachts in Europe, Australasia and the Caribbean.   He is a PADI Specialty Instructor; his specialties include photography and deep diving. He has a technical background from his previous role as an engineer in the ‘real world’ which supports his yachting and diving abilities.   Alan was born in Ireland and this reflects in his warm, hospitable character and fun sense of humor.   He is a caring captain who has a wealth of knowledge to share with his guests.   He mixes a fine rum punch and looks forward to sharing with you intriguing tales about the Caribbean.

Vicky grew up by the sea in the South of England and has been sailing for most of her life.  She is an RYA and Yachting Australia coastal skipper and a PADI Master Scuba Diver Trainer, specializing in wreck and night diving and has an outdoor industry training award.   Before leaving the colder waters of the UK behind, Vicky worked as a trainer for a communications company. She has a wonderful knowledge of wine and has been fortunate to travel around the major wine regions of the world and in doing so gaining a Wine and Spirit Trust distinction.   Her menus are dynamic and tasty, and she always rises to the challenge to discover new recipes, ingredients and fresh ideas.

Whether you simply want to watch the islands slip by while sailing leisurely through some of the world’s most beautiful waters or hoist a sail or two between spectacular dives, Alan and Vicky would love to make your vacation as special as possible and they will endeavor to truly spoil you in every way they can aboard Genesis II.

Breakfasts
Pancake Stacks and crispy bacon strips with spiced Caribbean honey syrup.
Lightly toasted English muffins with a choice of Eggs Benedict or Florentine.
Bagels drizzled with lime butter, scrambled eggs and smoked salmon slivers.
Cinnamon French toast and saucy sausages.
Raised individual omelettes with your choice of filling.

All breakfasts served with fresh fruit, yoghurt, cereals, toast and preserves, fruit juice, tea and fresh coffee.

Lunches
Grilled chicken with mango salsa salad.
Salmon Caesar Salad.
Freshly grilled tuna steak nicoise salad.
Satay chicken & buckwheat noodle salad.
Sea food ravioli with citrus salad.

All dishes served with a selection of salads and warmed breads.

Hors d’ oeuvres
Blue cheese and poached pear bruschetta.
Stuffed Nori Rolls.
Coconut shrimps with spicy dip.
Saffron noodle tarts with wild mushrooms.
Scallops with hazelnut butter.

If the kids don’t fancy the fancy stuff we have supplies of popcorn and nachos!

Dinners
Fillet of beef with puy lentils, mushrooms and parsnip puree.
Butter-flied lamb on white bean puree and slow roasted tomatoes.
Roast Cornish hens with prunes and thyme.
Loin of pork roasted with herbs, spices and rum.
Swordfish with sweet corn puree and snake beans.

Some vegetarian options:
Gnocchi with caramelised pumpkin and sage sauce.
Baked Ricotta with grilled radicchio.


Desserts
Raspberry risotto, coconut ice cream and a dark chocolate shard.
Honey roasted pineapple with pistachios and coconut yoghurt.
Orange Crème caramel and grand marnier oranges.
